Stuffed Hawaiian Roll French Toast

8 servings

Bakery

  • 1 pack of Hawaiian rolls

Produce

  • 6 oz blueberries (or fruit of choice)

Seasoning

  • 2 tbs vanilla extract
  • 2 tbs cinnamon
  • 1/2 cup powdered sugar

Dairy (alternatives)

  • 6 oz cream cheese (softened)
  • 1 tbs butter
  • 6 oz brown sugar oatmilk creamer

Filling

  1. Combine 6 oz softened cream cheese, 1 tbs cinnamon, 1/4 cup of sugar, 1 tbs vanilla, 2 oz of creamer in a bowl
  2. Use butter knife to create a small hole through the Hawaiian rolls
  3. Inject filling into each roll

Wash

  1. Combine ~4oz of creamer, 1 tbs vanilla, 1 tbs cinnamon, 1/4 of sugar in a bowl
  2. Quickly coat each Hawaiian roll in the mixture, careful not to over saturate
  3. Melt 1 tbs of butter in a large pan
  4. Cook the dipped rolls on medium high heat rotating to cook each side until golden


Serve with assorted fruit + powdered sugar + love

Little Gem Salad

3 servings

Protein

  • 1 can of anchovies in olive oil

Produce

  • 2 heads of little gem lettuce
  • 2 oz capers
  • 1 head of garlic
  • 1/2 lemon

Seasoning

  • 1/3 cup olive oil
  • Salt + pepper
  • 1 tsp flour
  • 1/3 cup bread crumbs
  • 2 tsp honey

Dairy (alternatives)

  • 1/2 cup (vegan) parmesan cheese

Anchovy Breadcrumbs

  1. Melt anchovies in olive oil over low heat ~2 mins
  2. Add breadcrumbs and stir until anchovies are fully absorbed ~2 mins
  3. Place breadcrumbs to the side until plating


Fried Capers

  1. Heat cooking oil med / high heat
  2. Drain capers and pat dry with paper towel
  3. (optional) sprinkle capers with 1tsp flour
  4. Fried capers in oil until crispt ~2 min and drain


Roasted Garlic Vinegarette

  1. Cut 1 head of garlic in half and drizzle with olive oil
  2. Wrap garlic in foil and roast ~30 mins at 350
  3. Combine roasted garlic cloves, 1/3 cup of olive oil, 1/2 lemon (squeezed), 2 tsp honey in a small blender
  4. Season with salt & pepper to taste

Salmon Cakes

10 servings

Protein

  • 30 oz of salmon (cooked or canned)

Produce

  • 1/2 sweet onion (diced)
  • 1 bell pepper (diced)
  • 1 sweet red pepper (diced)
  • 3 eggs

Seasoning

  • 1 tbs yellow mustard
  • Preferred cooking oil
  • Salt + pepper
  • Garlic powder
  • Old Bay
  • 1/3 cup fine bread crumbs
  1. Combine all ingredients in a large bowl
  2. Create ~2in wide salmon patties (add additional breadcrumbs if mixture isn't firm enough)
  3. Heat cooking oil med / high heat
  4. Cook salmon patties ~3 mins on each side or until brown
  5. Keep warm in a low heat oven

Lobster Bisque

6-8 servings

Protein

  • 5 Lobster tails

Produce

  • 4 Whole carrots (sliced)
  • 5 Stalks of celery (sliced)
  • Sweet onion (diced)
  • Chives
  • 1 Head of garlic
  • 6 oz tomato paste

Dairy

  • 2 cups heavy cream

Seasoning

  • Olive oil
  • Salt + pepper
  • Garlic powder
  • Cayenne
  • White wine
  • Flour
  1. Bring salted water to a boil and add lobster tails
  2. Boil lobster tails 3-5 mins then remove and de-shell once cool
  3. Re-add lobster shells to boiling water to create stock and bring heat down to med
  4. Sauté celery, carrots, onion, and garlic in olive oil until soft
  5. Add tomato paste and stir
  6. Sprinkle in ~1 tbs of flour and mix until it thickens
  7. Pour 1-2 tbs of white wine and bring to boil
  8. Spoon in ladles of lobster stock stirring continuously bring heat to med
  9. Season to taste
  10. Stir in 1-2 tbs of heavy cream
  11. Continue adding lobster stock until desired consistency
  12. Bring heat to low and blend soup in blender until creamy
  13. Add chunks of lobster meat and top with sliced chives

Lasagna Soup

6-8 servings

Protein

  • Chicken andouille sausage (cubed)
  • Chicken stock
  • Ground turkey meat

Produce

  • 1 sweet red pepper (diced)
  • 1 green bell pepper (diced)
  • 1 sweet onion (diced)
  • 4 roma tomatoes (diced)
  • 6 oz tomato paste
  • 2 cups spinach
  • Basil
  • 1 box lasagna noodles (gluten free)

Dairy

  • Ricotta cheese
  • Parmesan cheese
  • 2 cups heavy cream
  1. Blend diced tomatoes, red pepper, green pepper, and garlic with 1-2 cups of chicken broth (set aside)
  2. Sauté onions until translucent then add ground turkey in a heavy bottom pan
  3. Once the turkey is nearly cooked add cubed sausage
  4. Mix in 6 oz of tomato paste
  5. Pour blended sauce and stir over medium low heat
  6. Add spinach and a handful of chopped basil
  7. Pour 1-2 cups of heavy cream
  8. Pour 2-3 cups of chicken stock until desired consistency - bring to a light boil
  9. Break in pieces of lasagna noodles and cover to cook
  10. Once lasagna noodles are soft / fully cooked add handful of parmesan and 4-5 dollops of ricotta
  11. Top each bowl with basil and ricotta

Chicken Soup

6-8 servings

Protein

  • 2 packs of chicken thighs

Produce

  • 4 whole carrots (sliced)
  • 5 stalks of celery (sliced)
  • 1/2 onion (diced)
  • 1 lbs small red potatoes (halfed)
  • 1 Lemon (quartered)

Seasoning

  • Better Than Bouillon*
  • Olive oil
  • Salt
  • Pepper
  • Red pepper flakes*
  • Paprika*
  1. Wash and brine (soak in salt water) chicken for ~2hrs * optional
  2. Place chicken in heavy bottom pot and coat with 1 tbs of olive oil
  3. Coat chicken with 1-2 tbs of Better Than Bouillon and listed seasonings
  4. Fill pot 3/4 with water and bring to boil for ~10 mins until chicken is nearly cooked
  5. Remove chicken to cool and slice, add produce to boil ~5-10 mins
  6. Turn heat to low and re-add chicken to pot
  7. Cook low and slow for ~1-2 hours seasoning to taste
